how do you know what food looks like in an alien ship? Can you imagine eating black goo by mistake? An the food supply is 2000 years old....

But now that I remember, she took some stuff from the lifeboat. Maybe food rations besides oxygen?

yes she takes stuff from the lifeboat. Also, there is cryo chambers on the juggernaut ships.

The cryo chamber will probably keep her alive, but if the journey proves not too long, the rations she took from the life boat should sustain her. There was supposed to be enough food in there to survive two years.

The distance to the engineers' home world could be much farther than the distance from Earth to LV-223, which took two years for the Prometheus. So even if the engineers' ship is much faster, the journey could still take a very long time.
