It does appear to be an egg sack or some type of organic bag maybe a facehugger :)

I was wondering about that thing also. I talk about it in my [url=/review/]Review[/url] of Prometheus. It could be nothing - but it could also potentially be, like you say, the starting of the first "egg".
I guess if it is, the answer to "What came first the Alien or the Egg" would be "BOTH", Haha.

I suggest that it is one of the Engineer's internal organs.
We only see it briefly, but it is pulsating in sync with a 'pumping' audio effect. It appears to be attached to the Engineer's body by a single umbilicus. There is a similar audio effect (not quite the same) in some of the street scenes in [i]Blade Runner[/i], for example when Roy and Leon enter the Eye Workshop.
'Unidentified Alien Organ' is my best guess!

i didnt geta good look at it before but i thought it was some placenta like object.
if it is one of the jockey's organs then he really needs to lay of the space booze, looks just like liver cirrhosis!
